Ingredients;
1 pound of Brussels sprouts (halved)
1 large red onion (wedged)
2 tablespoons of olive oil
Kosher salt and black pepper
2 tablespoons of pure maple syrup
2 tablespoons of whole-grain mustard
1 1/2 pounds of skinless salmon fillet (cut into 4 pieces)
Lemon wedges for garnish
Directions;
1. Preheat the oven to 450 degrees
2. Toss the Brussels sprouts and onion in the oil, 1/2 teaspoon of salt and 1/4 teaspoon of pepper
3. Lay them on a cooking sheet and roast them on the bottom rack for about 15-20 minutes, toss them once to prevent burning
4. Mix together the mustard, maple syrup and 1/4 teaspoon of salt and pepper each
5. Place the salmon on a separate baking sheet
6. Using a brush, coat the salmon with the maple mixture
7. Place the salmon on the top rack of the oven and roast for 6-8 minutes, or until the salmon has cooked through
8. Serve the Salmon alongside the vegetables and wedges of lemon
