Ingredients;
- 3 tablespoons of olive oil
- 2 small russet potatoes (peeled and sliced)
- 1 small onion (thinly sliced)
- 9 large eggs
- Kosher salt and black pepper
- 1 (10oz.) package of frozen spinach (chopped)
- 1 cup of white Cheddar (grated)
- 4oz. of thinly sliced deli ham (cut into 2-inch squares)
- 1 tablespoon of red wine vinegar
- 1 teaspoon of Dijon mustard
- 1 head of red leaf lettuce. (red leaf, torn into bite-size pieces).
Directions;
1. Preheat the oven to 400 degrees
2. In a large skillet over medium heat, heat up 2 tablespoons of oil and cook the potatoes and onion for about 12-15 minutes, occasionally tossing so they do not burn
3. In a large mixing bowl, add in the eggs, 1/2 teaspoon of salt and 1/4 teaspoon of pepper and whisk together
4. Stir in the cheese, ham and spinach and add the egg mixture into the skillet
5. Stir the mixture once and transfer the skillet into the oven and allow it to cook for about 12-15 minutes, or until the eggs are firm
6. Whisk together the vinegar, mustard, 1 tablespoon of oil and 1/4 teaspoon of salt and pepper each
7. Place the lettuce in a serving bowl and pour in the vinegar mixture, tossing the salad to coat the leaves evenly
8. Serve the salad alongside the frittata and enjoy!
